The Cassowary is a fascinating bird found only in Tropical North Queensland and New Guinea. It is incredibly beautiful to behold with an impressive crown and glossy black and bright blue feathers, and it not only lives in the rainforest but is also crucial to it’s survival, helping to propagate many tree and plant species. Utterly unique in appearance, the Cassowary is also quirky in it’s lifestyle – did you know that the dad is solely responsible for the rearing of young from the moment the egg is laid? The Cassowary also has the reputation of the deadliest bird on the planet – they have extremely strong legs adorned with dagger-like claws and they become very protective and aggressive when protecting their young. Kicks from Cassowaries have been known to be fatal so be cautious when spotting these beautiful creatures in the wild. Unfortunately the Southern Cassowary is extremely endangered, with only 4000 left in Australia in the wild. We have named our chai after this magnificent local icon, with Tasmanian pepperberry as one of the ingredients our chai has a kick inspired by it’s namesake!
100% Australian-grown black tea blend containing:
Black Tea – We have selected three black teas from around Australia to use as the base of this Chai blend – local Daintree tea from here in the north as well as a touch of the cooler south flavour with tea from our favourite grower in Tasmania.
Vanilla – Our black tea is carefully infused with local single source Bourbon Vanilla grown right here in North East Queensland. The beans are farmed 100% sustainably and are grown without synthetic chemicals and pesticides.
Tasmanian Pepperberry – All good Chai needs a good bite, and the Tassie pepperberry in our blend gives a kick like a Cassowary! As well as a beautiful, warm flavour hit, Pepperberries are becoming more and more known for their health-giving properties, said to be highly anti-inflammatory and to offer protection against premature ageing!
Wattleseed – adds a nutty, roasted aroma to the blend – our wattleseed is wild-harvested in South Australia.
Cinnamon – Adding a little extra warmth and spice, we have sourced locally-grown North Queensland cinnamon as a beautiful addition to our chai.
Ingredients: All Australian- grown – Black Tea, Vanilla Essence, Wattleseed, Cinnamon, Tasmanian Pepperberry
Brewing Instructions: This black tea blend is best prepared with boiling water and brewed for 3-5 minutes. The longer you brew the spicier it will get! As an alternative to water you can add a teaspoon of chai to 200ml almond milk, warm on the stove, strain and enjoy.
